PNEUMATIC PRESSING SYSTEMS:
OPEN DRUM
Half of the drum is perforated, the other half is covered with a waterproof membrane.
With the assistance of the compressor the membrane is inflated until it compresses the grapes against the walls of the drum.
The wort flows through the perforated half of the drum to the collection tray.
CLOSED DRUM
One half of the drum is covered with a waterproof membrane while the other half contains the drainage channels, the half of the drum is not perforated just a few lines to decrease oxidation.
With the assistance of the compressor the membrane is inflated until it compresses the grapes against the walls of the drum.
The presses equipped with hermetic door and caps in the channels allow the maceration of the grape inside the drum.
