Why steam clean the barrels?

The steam opens the pores of the wood, releasing the tartar, wine and tannins that the wood has absorbed. The steam treatment revitalizes the wood of the barrels protecting the organoleptic characteristics of the oak.


Why disinfect barrels with steam?

The steam eliminates more than 99% of the organisms present in the wood, especially the Brettanomyces. According to several studies, the steam disinfection system has been shown to be the most effective method of deep disinfection of wooden containers for wine use. In addition to cleaning and disinfection, the rehydration capacity of oak barrels is accelerated, especially after a period of storage or before their first use with wine.
